As you may have seen on Facebook, we welcomed our fourth baby earlier this month. Our new baby girl is an absolute dream and delight! However, for the first time, I had a c-section, which has led to a much longer recovery than what I’m accustomed to when comparing to my previous deliveries. With December being such a busy month full of family gatherings, Christmas traditions, New Years celebrations, and such I’ve had to get very creative in the cooking department. So, this year it’s been important to prepare easy recipes for my family while still saving money.

On New Year’s Eve, we usually order pizza, eat appetizers, and enjoy a yummy dessert before heading out to our family watch night service at church. When Save-A-Lot asked me to create a simple Holiday Recipe I knew I wanted to make one of my daddy’s favorites.My daddy never cared for desserts until he was diagnosed with brain cancer. I’m pretty sure all the steroids he was on to prevent seizures affected what he was craving. Each time we would go home to visit before he passed away, I would make his favorite dessert for him, Sopapilla Pie. I thought that cooking one of his favorite treats for New Year’s Eve would be a great way for me to share stories about my daddy with my kids, which they love. Plus, it fits my requirement, “It has to be easy if I’m going to make it.”

First, we made a quick trip to Save-A-Lot to gather the ingredients. I love that Save-A-Lot keeps their customer’s budget in mind by offering up to 40% lower prices than conventional grocery stores. Since my hubby offered to sit in the car with the kiddos while I shopped, I was in and out in record time. With just a few ingredients, I was able to save money as well, which is especially important after Christmas. Once we got home, I found a few minutes of solitude while the big kids were working on homework, and the baby and toddler were napping. Another reason I chose this recipe is that I use a convenience product, crescent rolls, to create an utterly fantastic dessert, that is very easy to prepare.I only have tiny pockets of time during the day between the baby’s feeding schedule and the rest of the kids to get anything else done. Thankfully, it only took me about 8 minutes from start to finish before putting the Sopapilla Pie in the oven.

I’m going, to be honest; we didn’t wait until New Year’s Eve to enjoy our Sopapilla Pie. We just had to go ahead and try some last night as my entire kitchen smelled so cinnamonydelightful! I so enjoyed sharing my daddy’s favorite dessert with my kids. And, I especially appreciated that I was able to prepare it quickly without adding additional stress to my crazy life right now.

Ingredients

  • 2 packages crescent rolls 8 rolls in each package
  • 2 packages cream cheese softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 stick of butter 1/2 cup, melted
  • 1/2 cup sugar
  • 1 1/2 tsp cinnamon

Instructions

  • Preheat oven to 350 degrees.

  • Spray 9 X 13 pan with cooking spray.

  • Spread one can of crescent rolls in the bottom of the pan by pinching rolls together. You may need to use your hands to stretch them out a bit to cover the bottom of the pan entirely.

  • In a bowl, use a mixer to combine cream cheese, 1 cup sugar, and 1 tsp vanilla.

  • Spread cream cheese mixture on top of crescent rolls.

  • On a cutting board or floured surface, unroll the second can of crescent rolls. Pinch seams and place dough on top of the cream cheese mixture. Make sure that it extends to the sides and ends of the pan. You will need to flatten it out between your hands or use a roller to stretch it out before placing on top of crescent rolls.

  • In a small bowl, combine melted butter, 1/2 cup sugar, and 1 1/2 tsp cinnamon.

  • Pour mixture on top of crescent rolls.

  • Bake 27-30 minutes.

  • Serve warm.
