When I was growing up in New England, I rarely ventured into 'ethnic' cuisine. New England baked beans and pot roast were staples in our house. Tasty but not exactly exciting. Occasionally we got wild and crazy and went out for pizza or Chinese Food. It didn't happen often and my taste buds languished from lack of flavor. When I graduated from college I moved down to Texas and was inundated with bold new flavors and ethnic cuisine. I ate alligator on a stick (not bad!) and went to crawfish boils. I was in food heaven! The first time I was invited to a friend's fish fry I was introduced to a delicious little delicacy called hush puppies.

The most basic hush puppies recipe calls for a combination of flour and cornmeal mixed into milk and eggs. Flavorings like whole corn, onions, and diced hot peppers can be thrown in for additional flavor. The thick batter is spooned into hot oil and deep fried until it is a golden brown. If you have never tried hush puppies I have to say you are seriously missing out! I recommend you head out and pick up some P.A.N. cornmeal and explore the exciting things you can do with cornmeal!

This easy hush puppies recipe with corn and jalapeno is a great addition to a food explorer's menu!

Ingredients

  • 1 cup P.A.N. Cornmeal
  • ½ cup flour
  • 1 egg
  • 1 ½ to 2 cups milk
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 jalapeno, diced
  • ⅓ cup corn kernels
  • 4 cups Grapeseed oil for frying

Instructions

  1. Combine flour, cornmeal, sugar, salt, baking soda, salt, jalapeno and corn in a large bowl
  2. Heat oil over medium heat to approximately 350 degrees (or about medium high)
  3. Add egg and 1 cup milk to the dry ingredients
  4. Stir well. Add more milk as needed to create a thick batter. You want it almost dough consisitency
  5. Using a small melon baller or teaspoon, drop spoonfuls of the batter in hot oil
  6. Cook until the hush puppies are golden brown
  7. Remove from oil and drain on paper towel
  8. Repeat until all the dough is used
