Every year, my kids ask me to make fun and unique Christmas cookies. And of course, every year I sneak in something I like and can have fun with.

I have a minor obsession with chocolate and Nutella, so it’s no surprise that I’d eventually make Nutella no bake cookies, right? After all, I even use Nutella to make a dessert pizza. It should be no surprise that I’d eventually use it in cookies. I’ll admit it though,s’mores stuffed strawberrieswill always be my favorite.

So why Nutella?

Believe it or not, I don’t like peanut butter. I’m the kid who never once brought a peanut butter and jelly sandwich to school. I don’t like peanut butter cookies, and I’ve never eaten peanut butter off a spoon. Oddly, I enjoy peanut butter in savory uses like Thai dishes, but that’s it.

Fortunately, when I was a kid, I lived in Belgium for a couple years where I learned about Nutella long before you could find it in the States. Once it became readily available in stores, I found ways to enjoy it any way I could.

Ergo these Nutella no bake cookies.

Nutella is already pretty sweet, so I played around with this for awhile. I wanted a recipe that had the fabulous Nutella taste without making my teeth hurt from taking a bite.

The other challenge? I still needed enough sugar to ensure the Nutella no bake cookies hold together.

The good news? I figured it out. My family inhales these cookies.

Since Christmas is around the corner, I’m trying to hold a few of these goodies back to put out for Santa. If you’re reading this around Christmas, too, go ahead and think of these as reindeer poop cookies to make it even more fun!

How to Make Nutella No Bake Cookies

Use a heavy pot to ensure nothing scorches or burns. Add butter, sugar, milk, and cocoa powder. Turn the heat to medium and bring to a boil, stirring occasionally.

Let it boil for two to three minutes, stirring constantly. This ensures the sugar caramelizes enough to hold the Nutella no bake cookies together later.

Remove the pot from the heat and stir in Nutella, vanilla, and salt. Stir until everything dissolves.

Add the oats and gently stir until they’re coated. Be careful not to smush the oats too much.

Lay a silpat or wax paper on your counter, then scoop heaping tablespoons onto your prepped surface. Feel free to make them as random or “perfect” as you like.

Once they’ve cooled most of the way, you can even pick them up and roll them to form rounds, but that takes the fun out of the “reindeer poop cookies” side of things.

Let cool, then use an offset spatula to lift them into a container. Separate layers with wax paper and seal tightly. These last on your counter three to four days.

Nutella No Bake Cookies

Prep Time: 5 minutes

Cook Time: 7 minutes

Additional Time: 3 minutes

Total Time: 15 minutes

These delicious, gluten free Nutella no bake cookies are ready quickly and taste great without being too sweet. Make these to put out for Santa and call them "reindeer poop" to really crack your kids up!

Ingredients

  • 1/2 c butter
  • 1 c sugar
  • 1/2 c milk
  • 1/2 c cocoa powder
  • 1/2 c Nutella
  • 1 t vanilla
  • 1/2 t salt
  • 3 1/2 c oats
