What can I say, I’ve kicked my Thanksgiving food brain into gear. No better time, I might add, than this week’s Fall Fest with sweet potatoes! Garth, as a Southerner and an opinionated food-lover, has some pretty specific preferences when it comes to sweet potatoes and Thanksgiving fare, so I thought I would give him (and all of you) a pure expression of the sweet staple.

I pulled out my mandoline– a handy slicing tool that should go on your holiday gift list if you don’t have one– and sliced away at a heaping bowl of potatoes. After a bit of fancy arranging, I had a beautiful galette that was ready for the oven (and after it’s time in the oven, a holiday table, without a doubt). The galette was surprising in its simplicity, truly elegant and pure in flavor. With a touch of thyme and puff pastry to finish it off, there were no complaints from my husband/resident sweet potato-purist.

Sweet Potato Galette

2 Tbsp. cold butter, sliced + 2 Tbsp. melted butter
2 Tbsp. brown sugar
2 ¼ lbs. small sweet potatoes, peeled and sliced 1/8-inch thick
10 thyme springs, leaves stripped
Kosher salt and freshly ground pepper
1 sheet puff pastry, rolled ¼-inch thick and cut into a 9-inch round

  1. Brush an 8-inch, professional cake pan (with straight, 2-inch sides) with melted butter. Sprinkle bottom of pan with sugar and leaves from 1 sprig thyme. Arrange potatoes in layers of concentric, overlapping circles. Between layers, season with salt and pepper, sprinkle with leaves from 1 sprig thyme and dot with butter slices. Repeat to fill pan with remaining sweet potato slices. Drizzle galette with remaining melted butter; cover with foil.
  2. Bake covered galette in a preheated 350°F oven, 1 hour. Remove galette from oven; uncover and top with puff pastry. Place an oven-proof plate over puff pastry; return galette to oven and bake 15 minutes. Remove plate and bake until puff is golden, 20 to 30 minutes more. Run a knife around edge of cake pan, releasing galette from the sides; place serving plate over top of galette and invert plate to turn cake out. Serve warm.
